In what has now become an annual tradition, here is my list of new hotels 2023. As you know, the difference between other list of new hotels that you may have seen is that I only present new boutique hotels openings in Europe, hotels that are small in space but big in style.

On January 27 2023, the brand-new boutique hotel the cōmodo is set to open its doors in Bad Gastein, in the Austrian Alps. Reborn from the bones of an old clinic, the cōmodo translates a mid-century vibe into a modern mountain escape. The 70-room design hotel will use thermal water for spa treatments, have its own mountain spring, and come fitted with solar panels to produce its own electricity. The spa will offer two saunas, and an indoor and outdoor pool.
France – 15 new hotels 2023
Le Domaine du Mouflon d’Or, Zonza, Corsica
Opening Spring 2023
The owner of the Relais & Châteaux Grand Hotel Cala Rossa in the Gulf of Porto-Vecchio – is behind this project. Iconic of the Corsican mountains, the building stands in the picturesque, unspoiled village of Zonza, one hour from the coast. The seventeen hectare / forty-two acres of this authentic Belle Époque estate, is currently being renovated. Not dissimilar to Domaine de Murtoli, which we love, there will be secluded shepherds’ huts, with an optional private swimming pool, offering an unobstructed view of the Bavella needles. The Spa will deliver treatments using the natural and organic Corsican skincare brand Nucca.
Chateau de Theoule sur Mer
Purchased by the Millesime Collection group, this former holiday centre will be transformed into a hotel. The group intends to keep the four facades but build new inside the castle. 45 rooms with a swimming pool and a spa.
Chateau de Leognan
Another hotel by the Millesime group who announce that it’ll open the second half of 2023. There will be rooms in the chateau, but also the stables and a spa.
La Nauve, Cognac
In a former cognac distillery located around the town of the same name, a historic building was transformed into a 12-room boutique hotel affiliated with Relais & Châteaux. There will be a restaurant, a bar and a swimming pool in the gardens.
Como Montrachet, Burgundy
COMO Le Montrachet will open in phases, with phase one scheduled to be completed in 2022. The hotel is located in Puligny-Montrachet, in the heart of the sought-after Côte-d’Or region. It will provide unparalleled access to some of the most famous Burgundy Grand Cru vineyards. Arranged across four heritage buildings, 31 rooms and suites will be converted into chic sanctuaries starting with Villa Christine. The phased opening of the hotel will also see a COMO Shambhala Retreat, the first of its kind in France.
2 Experimental hotels on the basque coast
Experimental Group, the French-born contemporary hospitality group, has acquired two hotels, The Regina and Le Garage, in the coastal town of Biarritz, in the Basque region.
The Regina Hotel & Spa, which opened in 1907, is a legendary hotel, located overlooking the Atlantic with views across to the Biarritz lighthouse. The iconic Belle Époque-style building houses 72 rooms, a restaurant and bar and a spa, with an outdoor swimming pool.
Next door, lies Le Garage, a former classic automobile garage that became a boutique hotel in 2020. The 27 key property boasts incredible architecture throughout, welcoming guests through the vast arch door through to suites with private terraces, and a swimming pool. Within time, Experimental Group will refurbish both properties and relaunch them. Until then, both hotels will continue to run business as usual.
Le Grand Mazarin, Paris
Maisons Pariente will open Le Grand Mazarin in Paris in October, the fourth hotel to be added to the collection of 5 star boutique hotels in France. This new address in Le Marais is decorated by Swedish interior designer Martin Brudnizki.61 rooms, including 11 suites. There will be a restaurant, a bar and a swimming pool.
Le Relais Bernard Loiseau, Burgundy
An institution of gastronomy and the French art of living, anchored in Burgundy, le Relais Bernard Loiseau will complete its redesign of all rooms and spaces in 2023. The new suites by the architect Arnaud Behzadi were unveiled in 2022. With noble materials, play on textures and drapes, custom-designed furniture and dark woodwork panels, the rooms look very appealing for an autumnal escape so I’m curious to see the full redesign. There is a spa with indoor pool and of course the Michelin starred cuisine to enjoy.
La Pérouse, Nice
The famous Hotel La Pérouse Nice is undergoing renovation and planning to reopen in April 2023 under a new “Mediterranean Building” spirit. The design studio imagined the new decoration of the hotel to pay homage to the art of living in Nice. There are 54 rooms and suites, a solarium, a pool carved into the rock, and a restaurant-terrace, Le Patio.
La Cour des Loges, Lyon
A 5-star hotel in the city center of Lyon being completely renovated for summer 2023. Set within a historic ensemble of 4 buildings built for merchants, bankers, or printers during the Renaissance, the hotel will offer 61 rooms, a Michelin-starred restaurant Les Loges, and a spa inspired by the baths of ancient Rome.
Wood Hotel, La Réunion
Opening end of 2023.
A bit bigger than the hotels I usually list but it’s not often that you read about a boutique hotel in La Reunion, one of the French islands off Mauritius and South Africa. The hotel will be all eco friendly and made of wood with senior suites, and for the first time in a hotel in the Reunion 5 villas of 3 suites with swimming pool that can be booked independently. A main building with a magnificent catering area, an incredibly long 50-meter infinity pool, heated in winter with a decked beach with alcoves, overlooking the ocean…it all looks pretty nice.
Domaine de Chalamon, Provence
Domaines de Fontenille will open a new address near Saint-Rémy-de-Provence. The Domaine de Chalamon, which extends over nearly 20 hectares, takes place in a 16th century bastide surrounded by gardens. The hotel will offer 20 rooms and suites renovated in a refined style and Provençal furniture. A heated swimming pool and a beautiful park and a bistronomic restaurant will complete the offer.
They will also have another one near Oppède in March 2023 but nothing much is known about it, not even the name.
La Fantaisie, Paris
Opening Spring 2023
Another Martin Brudnizki-designed hotel in the heart of Paris’s 9th arrondissement. It’s one of the few five-star hotels with a full garden and expansive rooftop bar in the heart of Paris. They also will have a spa and pool. The rooms will continue the bucolic theme with lots of floral wallpaper and green inspiration.
Greece – 5 hotels openings in 2023
Opening March 2023
At Manna, set in an abandoned sanatorium 1,200 meters above sea level in Arcadia on the Peloponnese peninsula, this new hotel will have 32 rooms. A specific focus will be placed on wellbeing and nature, providing guests with a direct connection to the surrounding mountainous region of Peloponnese. In addition to guestrooms, the communal spaces will include a dining room, ritual room, bar, lounge, library, and spa with two treatment rooms.
Designed by the famous Block722 architects who have made their mark in Greece, the hotel will be located on 16 acres of ocean and cliff front land within a nature bird sanctuary reserve in Folegandros. Forty-four luxury suites with private pools, seven villas, two restaurants, three bars, gym, and a world class spa . The first 23 rooms will open in summer 2023.

Designed as a cluster of villas with private pools and gardens, PNOĒS embodies the spirit of the place in its architecture. Each villa will feature stone walls and lime-washed surfaces. Private pools and fireplaces will offer cosy spaces to relax year-round. Guests will also have access to onsite gardens, including an orchard, Mediterranean herb garden, tea garden with flowers to make infusions, and organic vegetable garden.
Santo Mine, Santorini
Opening summer 2023
Santo Mine is a luxury hotel carved into the cliffs in the village of Oia, located on an old stone mine site. The resort has 37 individual suites, each with a private pool or jacuzzi, with a design is inspired by Santorini’s volcanic landscapes. Among the facilities are a restaurant, bar, wine cellar, spa, and outdoor gym.
Eliamos Villas, Kefalonia
Opening April 2023
Eliamos Villas Hotel & Spa is a five-star retreat located on the southern shores of Kefalonia island above a secluded beach. Each of Eliamos’ 12 spacious villas consist of family or couple-friendly, modern accommodation with private salt-water pools and gardens. There will be a spa with treatments and a restaurant for breakfast, lunch and diner and a bar.
New hotel Millesime
Budapest will host a Maison Millésime at the end of 2023. With a surface area of 2000 m2, it is built on the foundations of an 1888 building classified as a Historic Monument and will bring together 30 unique suites, a restaurant, a bar and a wellness area. In the heart of Budapest, between the festive city and the famous baths, this residence will also have a magnificent park.
Kerlingarfjöll Mountain Resort
After renovation, this resort in the heart of the Highlands of Iceland, close to the mountain range of the same name, known for its hikes, its hot springs and its landscapes will offer accommodations for everyone from the backpacking traveler to the lavish explorer. There will be six base lodges, seven huts, a campsite, the former hotel with 15 rooms and a new hotel with 28 rooms and suites. Efurbis Therehed legacy hotel with 15 Standard

Italy 2023 new hotels with pools
Baglioni Hotel, Milan
Opening January 16, 2023
Casa Baglioni will be situated in Milan’s design district of Brera – close to luxury boutiques, art galleries, antique markets and chic cocktail bars – Casa Baglioni is intimate in size with 30 suites and rooms, a living area, a wine cellar and a restaurant by Michelin-starred chef Claudio Sadler.
Brach Roma, Rome
Located via Luisa Di Savola, in the historic center of the Italian capital, the 5,000 m property, which once housed a school, will be metamorphosed into a five stars luxury hotel under the artistic direction of Philippe Starck. The project will offer 62 rooms and suites, terraces, a rooftop, a Brach restaurant, a pastry shop, and a sports club with a private pool of 25 m.
Rosewood Porto Cervo
Rosewood Porto Cervo will be situated in Costa Smeralda, just 1.5 kilometers south of Porto Cervo town in Sardinia, and feature 65 guest rooms, including 26 suites, all complemented by spectacular 180-degree ocean views of the Mediterranean Sea. The resort will feature four versatile dining venues, a bistro and lounge bar, a pool bar and a beach club. There will be an outdoor pool and a spa. Guests will also be able to take advantage of the resort’s private pier to conveniently access Porto Cervo town by boat.
Hotel La Palma (Capri, Italy)
The island’s original hotel has been transformed by the luxury hotel brand Oetker collection into the ultimate resort destination. The design will honor both the hotel’s 1822 roots, the mid century glamour of Italian beach clubs, and the modern hospitality needed to create la dolce vita. La Palma Beach Club is set to be the Mediterranean’s buzziest new place to eat, drink, and play while the 50-key hotel will offer plenty of intimate places to unwind and enjoy the enchanting landscape.Located mere steps from the famous Piazzetta, it will comprise a rooftop restaurant and bar, its own beach club, a newly built pool deck, a spa and high-fashion boutiques.
Aman Resorts will launch its new luxury resort venture, Janu on the Adriatic coast. There will be sweeping coastline views, an emphasize on mental and social wellness, and the world’s first Janu Spa. From the photos it looks a bit big but at the same time, the sense of luxury that Aman offers should prevail.
Mamula Island, in the Bay of Kotor, Montenegro, will celebrate its grand opening in March. A long-abandoned 19th-century fortress on a previously uninhabited islet is being revitalised by architecture firm MCM London to create modern accommodations, a glass-covered courtyard, a memorial museum, an elegant spa, multiple restaurants and bars, outdoor pools, and a club for non-motorised watersports.
Legacy Hotel Cascais, Curio Collection by Hilton
Scheduled for summer 2023 – 58 Rooms
Legacy Hotel Cascais, Curio Collection by Hilton will sit in the historic heart of Cascais. Guests will be surrounded by a wealth of attractions, with museums, shops and restaurants just minutes away. Most of the hotel’s 58 rooms will have balconies, offering stunning ocean and courtyard views. Guests will also have access to amenities including a lobby bar, two restaurants, swimming pool, spa and fitness centre.
On the Alentejo coast, a series of private residences by the same group behind Spatia Comporta. Each one is set in grounds of 2800 m2 and feature private courtyard gardens and refreshing pools. You can benefit from hotel services, a retaurant, a spa, a beach club.
Umay is a sustainable family-run boutique resort near Melides, Portugal. There will be three different accommodation possibilities: 28 hotel rooms, 21 treehouses and 10 private villas. There will be an impressive semi circular infinity pool and private pools in the residences. The tree houses will also have plunge pools.
Spain new hotels with pools in 2023
Son Bunyola Estate, Mallorca
Son Bunyola Estate will be a hotel with 28 rooms in the Tramuntana region of Mallorca. The hotel consists of the restoration of a historic Finca and surrounding 810-acre estate, positioned on a UNESCO World Heritage Site. The hotel will comprise the main Finca and the Tafona, which previously contained the historic olive press as well as several annexe buildings. The hotel will also offer two restaurants, lounges, a several external dining terraces and a new swimming pool with sweeping views of the surrounding countryside and Mallorca’s famous Foradada
Nobu San Sebastian
Overlooking La Concha Bay, Nobu Hotel and Restaurant San Sebastián is scheduled to open in March 2023, with 20 luxuriously designed guest rooms and suites and a 98-seat Nobu restaurant offering panoramic water and city views. The fully renovated hotel sits on the site of the famed Palacio Vista Eder, constructed in 1912 and designed by renowned Spanish architect, Francisco Urcola.
Located in the southwest of the island, near the beaches of Cala Carbó and the village of Sant Josep, the 42-room hotel enjoys breathtaking views of the Mediterranean Sea, facing Cala d’Hort and the mythical rock of Es Vedrà. It will be renovated to re-open in summer 2023
Gran Hotel Son Net, Mallorca

Gran Hotel Son Net, a luxury hideaway on a private state dating back to the 17th century, nestled in the Serra de Tramuntana, on the beautiful island of Mallorca and only 20 minutes away from Palma city. Only 31 spacious rooms and suites, two elegant restaurants, an impressive infinity pool surrounded by private cabins, a beauty center and a fabulous collection of fine contemporary art.
The Rhodania, Crans Montana
Situated directly on the legendary Severiano Ballesteros Golf Course with spectacular views of the Valais mountains, the Hotel Rhodania offers 41 rooms and suites that will be characterized by their elegant and luxurious décor. The restaurant, bar and Swiss Chalet “Stübli” will offer high-quality local products and regional cuisine.
United Kingdom new 2023 hotels openings
Soho House, Manchester
Taking up residence in the former Granada TV studios in Spinningfields, the new venue will boast three floors at the top including a luxurious rooftop pool and bar area, event spaces, wellness facilities and a bar and dining room. Additionally, guests will be able to dine at their in-house Italian, Cecconi’s, as well as Mollie’s Motel & Diner next door – which is an affordable motel-diner concept designed by Soho House.
Bracken Hide hotel, Skye

- Opening 31 March 2023
Located in the hills above Portree, Bracken Hide hotel is a Kevin McCloud fantasy with Scandi-chic timber cabins, a turf-roofed stone and glass central hub and a Finnish sauna. There will be 32 cabins when it opens (another 23 will go up in due course), each with underfloor heating, Harris Tweed headboards and vast picture window views over the bay. The modern hub will house a restaurant, sunken whisky bar, bakery and cinema.
Beaverbrook new bedrooms
Beaverbrook Hotel is considering two projects, the Dower House and ‘Mickleham Village’, with the aim to complete both developments by the end 2023. The Dower House will be a self-contained exclusive house within the estate, complete with its own swimming pool, butler, chef and housekeeper, of the ‘highest quality’. A larger project to add another 21 bedrooms is also underway. A building previously occupied by Beaverbrook employees has now been vacated and is being transformed into ‘Mickleham Village’, which will comprise its own relaxed restaurant alongside the new rooms.
The Dunluce Lodge
The Dunluce Lodge, a new build 35 room, five-star luxury hotel and spa. The hotel will be built overlooking the famous 4th fairway at Royal Portrush Golf Club in Northern Ireland, with views of Portrush town, Donegal headlands and islands known as The Skerries. This development will be the first of its kind in the north coast region of Northern Ireland, with no other five-star hotel existing within a radius of 60 miles.
Le Manoir aux Quat’Saisons extension and spa
Le Manoir embarked on a program of renovation and restoration to turn it from a gastronomic restaurant focused hotel to a proper retreat hotel. Certainly when we went we thought exactly that: great overnight stay after a fabulous diner but not a place where you would spend a whole weekend.
The current 32 rooms will be joined by a new Wellness Spa, with a pool, sauna, hammam treatment rooms, a Bistro, Garden Villas, Garden Rooms, Pavilions and Storage Barns.
Ellenborough Park Hotel revamp
Ellenborough Park Hotel, a five-star country house hotel in Gloucestershire, will reopen in 2023 after a full refurbishment of its guest bedrooms and Brasserie. As part of the revamp, all 61 guest bedrooms at the property are undergoing an ‘affectionate refurbishment’ with ‘lavish fabrics, elegant wall coverings, plush carpets, and country chic furnishings.’ The Horse Box, Ellenborough Park’s brasserie, will also undergo a complete style transformation, complete with soft leather brocades, low lighting, tartan flooring, and countryside tweed fabric.
Cowley Manor refurbishment
After being acquired by Experimental Group (they own Hotel Henrietta in London and Menorca Experimental amongst others), I am curious to see how Cowley Manor will be rejuvenated. We used to love it and went many times but in recent years, it clearly showed the lack of investment. A refresh is long overdue. Experimental Group will continue to operate the hotel in its current guise, with plans to refurbish the interior over time, and introduce four new room types to the existing property.
